  • 1 (20 ounce) package refrigerated cheese tortellini
  • 1 tablespoon fresh sage (chopped)
  • 8 ounces cremini mushrooms (sliced)
  • 3 tablespoons butter (divided)
  • 1 tablespoon olive oil
  • 1 clove garlic (minced)
  • 1/2 cup freshly grated parmesan cheese
  • Salt & pepper (to taste)


Instructions

  1. Boil the tortellini: In a large pot, bring water to a boil. Add the cheese tortellini and cook according to package instructions until al dente.
  2. Prepare the sauce: While the pasta cooks, slice the mushrooms, chop the sage, and mince the garlic.
  3. Crisp the sage: In a skillet over medium-high heat, melt 1 tablespoon of butter with olive oil. Add chopped sage and cook for about 1 minute until crispy. Remove and set aside.
  4. Sauté the mushrooms: In the same skillet, add sliced mushrooms and minced garlic along with another tablespoon of butter. Sauté for about 5 minutes until browned.
  5. Combine: Drain the tortellini and add it to the skillet with mushrooms. Stir in remaining butter, grated parmesan cheese, crispy sage, salt, and pepper. Toss well to combine and serve immediately.
