- 3 large eggs

- 1/4 cup light brown sugar, packed

- 2 cups finely grated carrots
- 1/2 cup chopped walnuts (optional)
- 8 oz cream cheese, softened
- 1 cup powdered sugar, sifted
- 1 teaspoon vanilla extract
- 1/2 cup unsalted butter, softened
Instructions
- Preheat the oven to 350°F (175°C). Line a jelly roll pan with parchment paper and lightly grease it.
- In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
- In a large bowl, beat eggs and sugars until thick and creamy. Add vanilla extract and mix well.
- Gradually fold in dry ingredients until just combined, then gently fold in grated carrots.

- Dust a kitchen towel with powdered sugar and immediately invert the baked cake onto it. Roll up the cake in the towel and let cool completely.
- For the frosting, beat softened cream cheese, powdered sugar, vanilla extract, and butter until smooth.
- Once cooled, unroll the cake, spread frosting evenly over it, then re-roll without the towel. Refrigerate before slicing.
