  • 1 1/2 cups packed brown sugar
  • 3 tablespoons cinnamon for filling
  • 6 ounces cream cheese (softened)
  • 1/3 cup salted butter (softened for frosting)
  • 2 cups powdered sugar


Instructions

  1. In a stand mixer bowl, combine warm milk and sprinkle yeast on top. Add eggs, melted butter, salt, cinnamon, and sugar; mix well.
  2. Stir in carrots and coconut before incorporating flour until just combined. Let rest for about 5 minutes.
  3. Use the dough hook to knead on medium speed for about 5–7 minutes until smooth and slightly tacky.
  4. Transfer dough to a greased bowl, cover, and let rise in a warm area until doubled in size (about 30 minutes).
  5. Prepare the filling by combining softened butter, brown sugar, and cinnamon in a small bowl.
  6. Roll out dough into a rectangle, spread the filling evenly, then roll tightly and cut into slices.
  7. Place rolls in a greased baking pan, cover loosely with plastic wrap while preheating oven to 350°F; allow a second rise (20 minutes).
  8. Pour warmed heavy cream over risen rolls before baking for about 27–30 minutes until golden brown.
  9. For frosting, blend softened cream cheese and butter until smooth; mix in powdered sugar and vanilla extract.
  10. Once rolls cool slightly, generously frost them with cream cheese frosting.
