  • 1 large head of garlic
  • 1 ½ tablespoons olive oil (divided use)
  • 9 cups sweet onions (thinly sliced)
  • 2 ½ cups leeks (light green and white parts only)
  • 1 teaspoon salt (divided use)
  • 1 teaspoon dried thyme
  • 2 tablespoons all-purpose flour
  • 1/3 cup dry apple vinegar
  • 4 cups vegetable broth
  • 2 cups milk
  • Fresh thyme leaves for garnish
  • Freshly ground black pepper for garnish


Instructions

  1. Preheat oven to 350° F. Roast the whole garlic head wrapped in foil for 1 hour.
  2. In a large pot, heat olive oil over medium heat. Sauté onions and leeks for about 60 minutes until caramelized.
  3. Stir in flour, add roasted garlic cloves, apple vinegar, and vegetable broth. Bring to a boil and simmer for 30 minutes.
  4. Blend until smooth and return to the pot. Stir in milk and heat through before serving.
