  • 2 tablespoons Extra Virgin Olive Oil
  • 3 large Yellow or Sweet Onions
  • 3 tablespoons Unsalted Butter
  • 1 teaspoon Kosher Salt
  • ½ teaspoon Black Pepper
  • 1 cup (about 5 oz) Crumbled Feta Cheese
  • 1 tablespoon Fresh Thyme Leaves (optional)
  • Balsamic Glaze (for serving)


Instructions

  1. 1. Activate the yeast by combining warm water, instant yeast, and sugar in a mixing bowl. Let it sit until foamy.
  2. 2. In another bowl, mix bread flour and kosher salt.
  3. 3. Gradually combine the dry ingredients with the yeast mixture and knead until smooth.
  4. 4. Shape into a ball, place in an oiled bowl, cover, and let rise until doubled in size.
  5. 5. Caramelize sliced onions in a skillet with butter and olive oil over low heat until deep golden brown.
  6. 6. Preheat your oven to 450°F (232°C) with a baking stone inside.
  7. 7. Divide the risen dough, roll out into flatbreads, and top with caramelized onions and crumbled feta.
