- 1¼ cups all-purpose flour
- 1¼ cups old-fashioned oats
- ½ cup toffee bits
- 14 soft caramels
- Flaked salt for topping
Instructions
- Preheat your oven to 365°F (185°C) and line two baking sheets with parchment paper.
- In a stand mixer, cream together butter and sugars until light and fluffy. Add the egg and vanilla; mix well.
- Gradually incorporate the dry ingredients: baking powder, baking soda, salt, flour, and oats. Fold in the toffee bits.
- Form dough balls using a 3 tbsp scoop. Insert a caramel into the center of each ball without pushing it too deep.
- Chill the dough for at least 2 hours before baking.
- Space cookie balls on the baking sheets, sprinkle with flaked salt, and bake for 10–12 minutes until edges are golden.
