Description

Caramel oatmeal cookies are a scrumptious delight that brings together the chewy texture of oats and the decadence of sweet caramel. These cookies are perfect for any gathering or as a comforting treat at home. With gooey caramel centers and a sprinkle of toffee bits, they offer a delightful contrast in flavors and textures that cookie enthusiasts adore. Simple to make and customizable, these cookies can easily become your new favorite dessert.

Ingredients

Scale
  • ½ cup butter (room temperature)
  • ¾ cup dark brown sugar
  • ¼ cup granulated sugar
  • 1 large egg (room temperature)
  • 1 tsp vanilla extract
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1¼ cups all-purpose flour
  • 1¼ cups old-fashioned oats
  • ½ cup toffee bits
  • 14 soft caramels
  • Flaked salt for topping

Instructions

  1. Preheat your oven to 365°F (185°C) and line two baking sheets with parchment paper.
  2. In a stand mixer, cream together butter and sugars until light and fluffy. Add the egg and vanilla; mix well.
  3. Gradually incorporate the dry ingredients: baking powder, baking soda, salt, flour, and oats. Fold in the toffee bits.
  4. Form dough balls using a 3 tbsp scoop. Insert a caramel into the center of each ball without pushing it too deep.
  5. Chill the dough for at least 2 hours before baking.
  6. Space cookie balls on the baking sheets, sprinkle with flaked salt, and bake for 10–12 minutes until edges are golden.
