  • ¼ cup brown sugar
  • 6 tbsp unsalted butter, melted
  • ½ tsp cinnamon
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¼ cup sour cream
  • 2 medium apples (Honeycrisp or Granny Smith), peeled & diced
  • 2 tbsp butter
  • 3 tbsp brown sugar
  • ½ tsp cinnamon
  • 1 tsp lemon juice
  • ¼ cup flour
  • 2 tbsp brown sugar
  • 2 tbsp rolled oats
  • 2 tbsp butter, melted
  • Pinch of cinnamon
  • ½ cup soft caramels or caramel sauce
  • 2 tbsp heavy cream


Instructions

  1. Preheat the oven to 325°F (160°C).
  2. For the crust, mix graham cracker crumbs, brown sugar, melted butter, and cinnamon; press into a springform pan and bake for 8–10 minutes. Let cool.
  3. To make the filling, beat cream cheese and sugar until smooth; add eggs one at a time, then vanilla and sour cream. Pour over the cooled crust and bake for 30–35 minutes.
  4. Cool at room temperature before refrigerating for at least 2 hours.
  5. For the apple topping, sauté diced apples with butter, brown sugar, cinnamon, and lemon juice until softened.
  6. For the crumble topping, combine flour, brown sugar, oats, melted butter, and cinnamon until crumbly; toast in a skillet or bake until golden.
  7. Layer apple topping over the cheesecake and sprinkle with crumble before drizzling warm caramel sauce on top.
  8. Chill again for an hour before serving.
