- 1½ cups graham cracker crumbs

- ½ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ¼ cup sour cream
- 2 medium apples (Honeycrisp or Granny Smith), peeled & diced
- 2 tbsp butter
- 3 tbsp brown sugar
- ½ tsp cinnamon
- 1 tsp lemon juice
- ¼ cup flour
- 2 tbsp brown sugar
- 2 tbsp rolled oats
- 2 tbsp butter, melted
- Pinch of cinnamon
- ½ cup soft caramels or caramel sauce
- 2 tbsp heavy cream
Instructions
- Preheat the oven to 325°F (160°C).
- For the crust, mix graham cracker crumbs, brown sugar, melted butter, and cinnamon; press into a springform pan and bake for 8–10 minutes. Let cool.
- To make the filling, beat cream cheese and sugar until smooth; add eggs one at a time, then vanilla and sour cream. Pour over the cooled crust and bake for 30–35 minutes.
- Cool at room temperature before refrigerating for at least 2 hours.
- For the apple topping, sauté diced apples with butter, brown sugar, cinnamon, and lemon juice until softened.
- For the crumble topping, combine flour, brown sugar, oats, melted butter, and cinnamon until crumbly; toast in a skillet or bake until golden.
- Layer apple topping over the cheesecake and sprinkle with crumble before drizzling warm caramel sauce on top.
- Chill again for an hour before serving.
