1 cup carrots, shredded (80 g)
1/2 cup dried cranberries (60 g)
1/4 cup sunflower seeds (35 g)
1/4 cup red onion, finely chopped (35 g)
1 Honeycrisp apple, chopped (200 g)

Dressing Ingredients
3/4 cup non-fat plain Greek yogurt (170 g)
2 tablespoons apple cider vinegar
1 1/2 tablespoons honey (31 g)
1 tablespoon lemon juice
Salt and black pepper, to taste


Instructions

  • Wash and chop the broccoli into small bite-sized florets and place them in a large mixing bowl.
  • Add the shredded carrots, dried cranberries, sunflower seeds, chopped red onion, and chopped apple to the bowl.
  • In a separate small bowl, whisk together the Greek yogurt, apple cider vinegar, honey, lemon juice, salt, and pepper until smooth and well combined.
  • Pour the dressing over the broccoli mixture and toss thoroughly until everything is evenly coated.
  • Cover the salad and refrigerate for at least 20–30 minutes to allow the flavors to blend.
  • Toss again before serving and adjust seasoning if needed. Serve chilled.
