  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest

  • 1/2 cup granulated sugar
  • 3/4 cup all-purpose flour (1/4 cup for filling + 1/2 cup for topping)
  • 1/2 cup old-fashioned oats
  • 1/3 cup brown sugar
  • 1/4 cup granulated sugar (for topping)
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 6 tablespoons cold butter (diced)


Instructions

  1. Preheat your oven to 350 degrees F.
  2. In a large bowl, combine blueberries, sliced peaches, lemon juice, lemon zest, vanilla extract, granulated sugar, and flour. Toss gently until coated and set aside.
  3. In another bowl, mix flour, oats, brown sugar, granulated sugar, salt, and cinnamon. Add cold diced butter; mix until crumbly.
  4. Pour the fruit mixture into a baking dish and top with crumble mixture.
  5. Bake for 40 to 45 minutes until golden brown.
