  • 5 egg whites
  • 1 1/4 cup granulated sugar
  • 2 tbsp cornstarch
  • 2 tsp lemon juice
  • 2 cups blackberries
  • 1/4 cup sugar (or alternative sweetener)
  • 1 1/2 cups cold heavy cream
  • 1/4 cup powdered sugar


Instructions

  1. Preheat oven to 275°F (135°C) and line a baking sheet with parchment paper.
  2. In a stand mixer, beat egg whites until soft peaks form; gradually add granulated sugar and beat until stiff peaks form. Fold in cornstarch, lemon juice, and food coloring.
  3. Spoon meringue onto the baking sheet to form nests with indentations. Bake for about 60 minutes until crisp outside but soft inside. Cool in the oven with the door ajar.
  4. For the filling, heat blackberries, sugar, lemon juice, cornstarch, and water in a saucepan until thickened; cool completely.
  5. Whip cold heavy cream with powdered sugar until soft peaks form.
  6. Assemble by filling meringues with blackberry mixture and topping with whipped cream.
