  • 7 large egg whites, room temperature
  • 1 1/2 cups buttermilk, room temperature
  • 2 Tbsp vegetable or canola oil
  • 2 tsp vanilla extract
  • 3 cups unsalted butter, room temperature (for frosting)
  • 1 Tbsp vanilla extract (for frosting)
  • 1 1/2 tsp fine salt (for frosting)
  • 10 cups powdered sugar (for frosting)
  • 3 cups cookie butter (for filling & topping)
  • 1/4 cup heavy whipping cream, room temperature (for filling & topping)
  • 12 Biscoff cookies, cut into small pieces for topping


Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two 9-inch round baking pans with grease and parchment.
  2. In a large bowl, mix flour, sugars, baking powder, cinnamon, and salt.
  3. Cream the butter until smooth; gradually add dry ingredients.
  4. Mix in egg whites one at a time; then add buttermilk and vanilla until combined.
  5. Divide batter between pans and bake for about 33 minutes or until a toothpick comes out clean.
  6. Cool cakes in pans for 10 minutes before transferring to racks to cool completely.
