  • 1/2 cup light or dark brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 10 tablespoons unsalted butter
  • 2/3 cup semi-sweet chocolate chips
  • 1/4 cup unsweetened Dutch cocoa powder
  • 2/3 cup all-purpose flour
  • 1 teaspoon espresso powder
  • 4-5 Biscoff cookies (for topping)


Instructions

  1. Preheat your oven to 350°F (180°C) and line an 8×8 baking pan with parchment paper.
  2. In a mixing bowl, whisk together brown sugar, granulated sugar, eggs, and vanilla extract until smooth.
  3. Melt the butter and chocolate chips in a microwave-safe bowl; stir in cocoa powder until well combined. Add to the egg mixture.
  4. Fold in flour, espresso powder, and salt until just mixed.
  5. Pour half of the batter into the prepared pan, add a layer of chilled cookie butter, then top with remaining batter.
  6. Sprinkle broken Biscoff cookies on top and drizzle additional cookie butter over them.
  7. Bake for 30-40 minutes or until a toothpick comes out with a few moist crumbs.
  8. Allow cooling completely before slicing into squares.
