- 2/3 cup semi-sweet chocolate chips
- 1/4 cup unsweetened Dutch cocoa powder
- 2/3 cup all-purpose flour
- 1 teaspoon espresso powder
- 4-5 Biscoff cookies (for topping)
Instructions
- Preheat your oven to 350°F (180°C) and line an 8×8 baking pan with parchment paper.
- In a mixing bowl, whisk together brown sugar, granulated sugar, eggs, and vanilla extract until smooth.
- Melt the butter and chocolate chips in a microwave-safe bowl; stir in cocoa powder until well combined. Add to the egg mixture.
- Fold in flour, espresso powder, and salt until just mixed.
- Pour half of the batter into the prepared pan, add a layer of chilled cookie butter, then top with remaining batter.
- Sprinkle broken Biscoff cookies on top and drizzle additional cookie butter over them.
- Bake for 30-40 minutes or until a toothpick comes out with a few moist crumbs.
