  • 1 (6 oz) can tomato paste
  • 1 cup beef broth


Instructions

  1. In a large pot over medium heat, add oil and sauté chopped onion until translucent. Stir in minced garlic and grated ginger, cooking until fragrant.
  2. Add beef chunks and brown on all sides for about 5–7 minutes, seasoning with salt and black pepper.
  3. Mix in curry powder, cumin, turmeric, cayenne (if using), smoked paprika, and ground coriander until beef is well coated.
  4. Pour in coconut milk, tomato paste, and beef broth; stir well to combine and bring to a gentle simmer.
  5. Reduce heat to low, cover the pot, and let it simmer for about 2 hours until the beef is tender.
