  • 1 1/2 cups crushed vanilla wafers
  • 1/3 cup melted butter
  • 3 ripe bananas, mashed
  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1/2 cup banana pudding mix


Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, combine crushed vanilla wafers and melted butter. Press firmly into the bottom of a 9-inch springform pan.
  3. Beat cream cheese and sugar together until smooth. Add eggs one at a time, mixing well after each addition. Stir in mashed bananas and vanilla.
  4. In another bowl, whip heavy cream until soft peaks form; gently fold in banana pudding mix.
  5. Combine the cream mixture with the cheesecake filling until just blended, then pour over the crust.
  6. Bake for 50-55 minutes or until set and cool at room temperature before refrigerating for at least 4 hours.
