Instructions

  1. Preheat your oven to 160°C (320°F) for fan/convection or 180°C (355°F) for standard ovens. Grease and line a loaf tin (23 x 13 cm / 9 x 5 inches) with baking paper.
  2. In a mixing bowl, mash the overripe bananas thoroughly using a fork or potato masher. Add the canola oil, milk, both sugars, eggs, and vanilla extract; stir until well combined.
  3. Sift the flour, baking powder, and salt over the banana mixture. Gently fold until just combined—don’t worry about small lumps.
  4. Pour the batter into the prepared loaf tin and bake for 45-55 minutes, or until golden brown and a skewer inserted into the center comes out clean. Let cool in the tin for about 10 minutes before transferring to a wire rack.
