Indulge in the delightful experience of Banana Blondies, a perfect treat for banana lovers! These chewy, sweet bars feature ripe bananas as their star ingredient, offering a natural sweetness and moistness that elevates them to a crowd-pleasing dessert. With minimal prep time and easy-to-find ingredients, these blondies are great for quick baking or customizing with your favorite nuts or chocolate chips. Perfect for family gatherings, potlucks, or just because. Serve them warm with a scoop of ice cream or drizzled with chocolate sauce for an extra indulgent touch.

Ingredients

Scale
  • ½ cup (113g) unsalted butter, melted
  • 1 cup (200g) brown sugar, packed
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 ripe bananas, mashed (or 3 for stronger banana flavor)
  • 1 cup (125g) all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon cinnamon (optional)
  • ¼ teaspoon salt
  • ½ cup chopped walnuts, pecans, or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. In a mixing bowl, whisk melted butter and brown sugar until smooth. Add the egg and vanilla extract, then stir in the mashed bananas.
  3. In another bowl, combine flour, baking powder, baking soda, and salt. Mix well.
  4. Gently fold the dry ingredients into the banana mixture until just combined. If adding mix-ins like nuts or chocolate chips, fold them in now.
  5. Spread the batter into the prepared pan and bake for 25–30 minutes until golden brown and a toothpick comes out mostly clean.
  6. Allow to cool for 15–20 minutes before slicing into squares.
