Ingredients
- 500g Carrots
- 100g Puy Lentils
- 400g Vegan Yogurt
- 20g Tahini
- 2 tbsp Balsamic Vinegar
- 3 tbsp Olive Oil
- 1 Orange
- 2 tbsp Maple Syrup
- 4 Sprig Thyme
- 1 tsp Ground Cumin
- Salt and Pepper to taste
- 30g Pecans (to serve)
- 25g Fresh Herbs (to serve)
Instructions
- Preheat your oven to 200°C (392°F).
- Cook lentils in a saucepan for 25-30 minutes until tender. Spread on a baking tray, season with cumin, salt, pepper, and olive oil, then bake for 25 minutes until crispy.
- Toss sliced carrots with olive oil, salt, and pepper; roast on a lined tray for 20 minutes.
- Combine balsamic vinegar, olive oil, and maple syrup in a bowl. Drizzle over carrots after initial roasting time; add thyme and return to oven for another 15-20 minutes.
- Mix tahini and vegan yogurt; squeeze juice from half an orange into the mixture and season to taste.
- Toast pecans on a baking tray for about 8 minutes until fragrant.
- Serve by layering whipped yogurt on the plate followed by lentils and roasted carrots; garnish with toasted pecans and fresh herbs.
