Instructions

  1. In a medium bowl, sift together flour, salt, baking soda, ginger, cinnamon, and cloves. Set aside.
  2. Cream softened butter and brown sugar in a large mixing bowl using an electric mixer on medium speed until light and fluffy (about 2-3 minutes).
  3. Beat in the egg, molasses, and vanilla until smooth.
  4. Gradually mix in the dry ingredients on low speed until a soft dough forms; avoid overmixing.
  5. Cover the dough with plastic wrap and refrigerate for at least one hour.
  6. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  7. Scoop about 1 tablespoon of dough, roll into balls, coat in granulated sugar, and place on the prepared sheets with space between.
  8. Bake for 8-10 minutes; cookies will firm up as they cool.
  9. Cool on the baking sheet for five minutes before transferring to a wire rack.
