Ingredients
- 4 (8-inch) tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 3 cups chopped fresh spinach
- 8 oz mushrooms, sliced
- Olive oil for brushing
Instructions
- Preheat the oven to 400°F (200°C).
- Microwave sliced mushrooms in a microwave-safe bowl for 2 to 3 minutes; drain excess liquid.
- Lightly brush one side of each tortilla with olive oil and place oiled-side down on a baking sheet.
- On one half of each tortilla, layer half of the cheese, followed by spinach and mushrooms. Top with remaining cheese and fold over.
- Bake for about 6 minutes, then flip each quesadilla and bake for an additional 6-7 minutes until golden brown and crispy.
