  • 4 (8-inch) tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 3 cups chopped fresh spinach
  • 8 oz mushrooms, sliced
  • Olive oil for brushing


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Microwave sliced mushrooms in a microwave-safe bowl for 2 to 3 minutes; drain excess liquid.
  3. Lightly brush one side of each tortilla with olive oil and place oiled-side down on a baking sheet.
  4. On one half of each tortilla, layer half of the cheese, followed by spinach and mushrooms. Top with remaining cheese and fold over.
  5. Bake for about 6 minutes, then flip each quesadilla and bake for an additional 6-7 minutes until golden brown and crispy.
  6. Let cool slightly before slicing into wedges and serve warm.
