  • 2 ripe avocados
  • 4 thick slices of bread (sourdough, multigrain, or olive bread)
  • 4 oz smoked salmon
  • 1/3 cup crème fraîche
  • 1 tbsp fresh lemon juice
  • Zest from one lemon
  • 1 tbsp chopped fresh dill
  • 2 spring onions/scallions
  • 2 tbsp capers (chopped)
  • A pinch of kosher salt or sea salt flakes
  • A pinch of freshly ground black pepper
  • 2 tbsp extra-virgin olive oil (for grilling)


Instructions

  1. Brush both sides of each bread slice with extra-virgin olive oil. Grill in a skillet over medium-high heat for about 2–3 minutes per side until golden brown.
  2. In a mixing bowl, combine crème fraîche, lemon juice, lemon zest, dill, spring onions, capers, salt, and pepper. Mix until well combined.
  3. Spread mashed avocado generously on each toasted slice. Top with smoked salmon and finish with a dollop of the lemon-herb crème fraîche.
