  • 3 Russet potatoes
  • 2 cups precooked cornmeal
  • 1/2 cup scallions (finely chopped)
  • 1/4 cup red onion (diced)
  • 1/4 cup red bell pepper (diced)
  • 3 garlic cloves (minced)
  • Salt and pepper to taste
  • Vegetable oil for frying
  • 1/4 cup white vinegar
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon Dijon mustard
  • 1/4 cup Roma tomato (diced, about 1/2 a tomato)
  • 1/4 cup cilantro (finely chopped)
  • 1 teaspoon Better than bouillon (chicken bouillon)
  • 1 tablespoon cornstarch
  • 2 cups water


Instructions

  1. Prepare the filling: Boil potatoes until tender, peel and mash. Sauté red onion, red bell pepper, garlic, scallions, cilantro, cumin, paprika, and diced tomatoes in a pan then add ground beef until browned. Mix in mashed potatoes, white vinegar, and season.
  2. Make the dough: Combine cornmeal, water, salt, and chicken bouillon in a bowl. Knead until smooth and let rest for 10 minutes.
  3. Assemble the empanadas: Roll out small portions of dough into circles, add filling in the center, fold over, and seal edges.
  4. Cook: Fry in hot oil until golden brown or bake at 375°F for about 20 minutes.
