Ingredients

Scale
  • 2 teaspoons ground coriander
  • 2 teaspoons ground cumin
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 2 teaspoons red chili powder
  • 1 teaspoon garam masala
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 dried red chilies (optional, for extra heat)
  • 1.5 lbs beef chuck or stewing beef, cut into bite-sized pieces
  • 1 large tomato, pureed
  • 1 tablespoon tomato paste
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup beef broth or water
  • 1 tablespoon white vinegar or lemon juice
  • 1 teaspoon sugar (optional, balances acidity)
  • 2 tablespoons chopped fresh cilantro (for garnish)

Instructions

  1. In a small bowl, mix ground coriander, cumin, turmeric, paprika, red chili powder, and garam masala; set aside.
  2. Heat oil in a large deep pan over medium heat and sauté onions until golden brown (about 10 minutes). Add garlic and ginger; cook for another 1-2 minutes.
  3. Increase heat to medium-high; add beef pieces and sear until browned (about 5-7 minutes).
  4. Stir in the spice mix and toast briefly before adding pureed tomato, salt, black pepper, vinegar, and broth.
  5. Bring to a boil; reduce heat to low and simmer covered for 60-75 minutes until beef is tender.
  6. Adjust seasoning as needed before serving garnished with fresh cilantro.
