Ingredients

Scale
  • 3 boneless skinless chicken breasts
  • 5 tablespoons unsalted butter
  • 1 medium shallot
  • 1 teaspoon garlic
  • 3 tablespoons all-purpose flour
  • 2 cups chicken broth
  • ½ cup half-and-half
  • 1 package potato gnocchi (16 ounces)
  • 2 cups fresh baby spinach
  • ½ cup grated Asiago cheese

  2. In the same skillet, melt remaining butter, sauté shallots until soft, then add garlic. Whisk in flour for 1 minute.
  3. Gradually add chicken broth while whisking to combine; simmer until slightly thickened (3-5 minutes).
  4. Stir in half-and-half and gnocchi; cook until tender (5-7 minutes).
  5. Add spinach and grated Asiago; cook until spinach wilts and cheese melts.
  6. Serve chicken over gnocchi mixture, garnished with parsley.
