  3. In a mixing bowl, toss red bell pepper, zucchini, yellow squash, and red onion with olive oil, salt, black pepper, and paprika.
  4. Spread vegetables on a baking sheet and roast for about 20-25 minutes until tender.
  5. Combine cooked quinoa with roasted vegetables in a bowl. Add lemon juice and toss gently.
  6. Serve warm or chill in the refrigerator before serving.
