  • 1 tablespoon diced almonds (per croissant)

  • 3 tablespoons alcohol-free vanilla extract
  • 2 tablespoons granulated sugar
  • 1 cup almond flour or almond meal
  • 1/2 cup granulated sugar
  • 8 tablespoons salted butter (softened)
  • 1 large egg
  • 1 teaspoon almond extract


Instructions

  1. In a mixing bowl, combine almond flour, granulated sugar, and vanilla extract until smooth. Add softened butter, egg, and almond extract; whisk until fully blended.
  2. Preheat the oven to 350°F (175°C). Slice each croissant in half lengthwise without cutting all the way through. Spoon a generous amount of almond filling into each croissant half and sprinkle with diced almonds.
