  • ½ cup of Frozen or Canned Corn, thawed or drained
  • ¼ cup of finely chopped Red Onion
  • ¼ cup of fresh Cilantro, chopped
  • 1 tablespoon of Lime Juice
  • ½ teaspoon of Cumin Powder
  • ¼ teaspoon of Chili Powder
  • Salt and Black Pepper to taste
  • 4 large (10-inch) Flour Tortillas


Instructions

  1. Mash the ripe avocado in a mixing bowl and mix in freshly squeezed lime juice.
  2. Add rinsed black beans, drained corn, chopped red onion, and cilantro to the bowl.
  3. Season with cumin powder, chili powder, salt, and pepper; mix gently.
