- 1 large ripe Avocado
- ½ cup of Frozen or Canned Corn, thawed or drained
- ¼ cup of finely chopped Red Onion
- ¼ cup of fresh Cilantro, chopped
- 1 tablespoon of Lime Juice
- ½ teaspoon of Cumin Powder
- ¼ teaspoon of Chili Powder
- Salt and Black Pepper to taste
- 4 large (10-inch) Flour Tortillas
Instructions
- Mash the ripe avocado in a mixing bowl and mix in freshly squeezed lime juice.
- Add rinsed black beans, drained corn, chopped red onion, and cilantro to the bowl.
- Season with cumin powder, chili powder, salt, and pepper; mix gently.
